I am going to have to ask some stupid questions.
When you fitted the new drums did you clean them well with something like lacquer thinners?
Did you make sure that neither the wheel cylinders nor the axle seals were leaking?
Are you sure that the leading and trailing shoes are the correct way round?
Did you adjust the shoes manually until there was a slight drag on the drums?
Did you notice if there was a slight bevel on the upper and lower edges of the new shoe linings?
Drum brakes are more prone to locking up than discs anyway and it may be that your new rears are grippier than the old ones and if you put 500lbs in the bed the the rears are ideal.
