97 Expy, 31mpg!!! ...how??

My 97 has a 6" Fabtech lift and rolls on 37" Toyo MT's. The gearing was redone to match the tires. I averaged 18mpg from Salt lake City to Silver Springs NV (about 50 miles east of Reno) on a recent trip and that is the best I have ever seen. It is mostly flat driving out here with some hills in between. My daily average is 12 to 14mpg which depends on how much city or highway driving is done. And those are very consistent numbers.
