What you need to do is to get an adapter fitting that is bigger than the threads on your fitting as it is right now. It will have threads on both the inside and the outside.
Drill out, tap the manifold for the outer threads for your adapter fitting and install.
Reinstall the probe in the new socket and be done.
Unless the threads are barked up on the probe, then you also have to buy a new probe.
It is VERY helpful in this instance to also buy a new drill bit and thread cutter for this job.
Cast iron ( what the manifold is made of ) is very easy to work with if you have sharp tools. Very difficult and brittle if you do not. Use cutting oil on all the bits and it will work in your hands like hard clay. Very easy.
