OK. So what's the least obtrusive set of gauges I can get? I don't want the A pillar gauges because they make a wide pillar wider and harder to see around. Better I should have one gauge that I can hit a button a few times to see all the measurements.

Aeroforce Scangauge will do what you describe; I have a 2-gauge pod, upper one filled with the Scangauge that gives all the readings (EGT on the upper display constant, bottom display cycles through the temp readings), and the lower one is the DP-Tuner switch. With only two gauges, nothing in the line-of-sight is obstructed.
I run my DP for economy only as well. I am more concerned about the tranny so I have an oil temp gauge for that and then I figured that a pyro would indicate any problems. I opted out of the boost gauge. Mine are located under the dash near the floor right over the hump. I also put my DP switch inbetween them. They can be seen easily and they are out of the way. As for fuel economy... I find that I get better mpg using the 60tow instead of the 80 econ.
A trans guage would be nice with a V10, but unless you have a turbo hooked up, you dont need the pryo or boost guage. I don't have any experience with programs for gas engines. Never seemed like their advantages were worth the cost. From what i have heard, you will get pretty much the same economy with a bit more power (15-20hp).
