How integrated to you want to get and what vehicle/head unit do you have?
There are simple interfaces that give you a 2.5mm jack that can connect to any audio source. Then there are Ipod and vehicle/headunit specific units that will allow you plug in the ipod, charge it and control the features from the radio's buttons. Some fancy ones will even show the song title on the radio.
PIE, Peripheral, PAC, Axxis and some others make decent units. I want a PIE for my truck when I get a compatible Ipod, my 3rd gen (5+ years old) doesn't communicate with 3rd gen interfaces. You should be fine with all of the newer units as long as your adapter supports your Ipod model. Expect the nice units with good integration to run just under $200, and the Ipod touch with a big hard drive to be around $500.
Installation is typically pluging into the CD changer port and maybe some power wires.
