Have you been able to pull any codes at all? Also, what kind of shape is the alternator in? My brand new alt was doing some crazy stuff because I didn't have the wires down tight enough. Just some more for you to check.
Maybe it's just me but the way that this sound is a bit on the rude side. If you have a question ask....without the sarcasm. We all try to help out whenever possible. With that being said. do what Mike said...and check the grounds. Have you tested the battery when the guage is doing this to see if it is an actual problem or a guage problem.

Words can be misleading. I'm just frustrated as can be with this. I have 25K waiting for this problem to be resolved. I know the batteries are no dead cause I can turn it off and start it right back up. I 'm not sure how this system works but on my 2000 dodge diesel I seen the battery gauge drop down completely when he alt. went out. The regulator is in the computor on that truck. I just can't understand what would cause the temp gauge to peg out at the exact same time as the battery gauge drops. Whats the connection? It only happens after about ten minutes or so. I'm thinking it some how has to do with the truck reaching a certain temp. Maybe oil temp?
I was not running the scanner myself so I don't know of any codes but the tech told me to change the collent temp sensor because he was unable to run a cylinder contrubution test off the collent temp. He had to wait for the oil temp to get to 153 degrees. Is it at all possible that the collent temp sensor would throw off all the other gauges?
I also have the oil pressure gauge going stupid. That starts to climb all the way to the top after runniog ffor about 5 minutes.
It sounds like something electrical. If the alt. is messing up it can and will cause those very problems. Have you checked the alternator yet? Have you checked the grounds yet? Have you checked the battery posts yet? A slightly, very slightly loose connection on the battery can cause all kinds of grief. I understand your frustrations, but these things need to be checked first.
You have a huge voltage drop. It's probably at the batteries or the starter. Also check the ground on the block. When this happens take your dvom and start checking for a voltage drop. Put your dvom on voltage and start checking for voltages on both sides of the connection. Start at the battery and work your way back to the starter relay ( also check your fusible links) and down to the starter.
Check to be sure all the relays are good. I have a car that often pops out a relay and the temp gauge shoots up all the way. Just a thought maybe this is whats happening to you.
Does that engine run off an ECM?? If so I'd check your wiring going to it. There should be a fuse controlling power going to it. The coolant, engine oil, speed, volts, everything runs thru it. There is usually more than one fuse, controlling different functions of the ECM, so that one blown fuse doesnt fry your whole system.
Make sure you GPR is not draining juice. You can simply unhook it as most places are warm enough not to need the glow plugs. Other problems could be the starter as mentioned, but more likely a bad plate in one of your batteries.

I put new batteries in and had the old one tested they are fine anyways.
I really don't know where to start on checking grounds ect.
