Just curious how many of you out there brew your own beer or wine. I just bought my first beer-making kit a few weeks ago and made my first batch last weekend. I have a feeling that it's going to taste pretty horrible because we made some amatuer mistakes that we couldn't fix. Hopefully the second batch turns out better.
So tell me about any of your homebrewing experiences, good or bad. I want to learn as much as I can before I make attempt #2.
Sanitation is the key! Keep all the unwanted microbes out and it'll be drinkable. Don't over prime the bottles when you rack your beer or they will explode. Experiment after you get the basics down. We have a local brewing supply store (Mr. Suds, http://www.mrsuds.net/) with a helpfull and knowlegable owner. Our county fair starts today so I'm going to see how I did in the home brew competition. Entered a black ale that's very tasty. Keep at it and good luck.
Way back when I worked at an FAA Flight Control Center, we started to make homemade wine and, to my surprise, some of it turned out quite well. Beer was usually a disaster.
I've made about 70 batches in the last 6 years. I guess about 10 of them turned out less than tasty, but none were undrinkable. Luckily my 1st batch of amber ale turned out fine.
Why do you think your first batch is going to taste horrible? Have you been opening up bottles before they are ready???? Shame on you.
We're talking beer here, not distilling moonshine. It's very difficult to get over 10% alcohol by volume in beer (homebrew or otherwise) since the yeast can't tolerate those levels.
