Congratulations on your purchase. The V10 is certainly a good motor, although some feel it is a bit underpowered for a 6.8L engine. Intake and exhaust will certainly help pep it up a bit.
The are several sponsors on here there are able to provide quality performance tuners for your truck. Troyer Performance is a great company and would be able to help you with the bolt-on stuff as well as programmers. We (Power Hungry) can also provide custom tuning for you vehicle although we don't currently handle any of the bolt-on stuff like intakes or exhausts.
Just poke around a bit and you'll find plenty of places to empty your pockets! Just remember... performance is inversely proportional to the thickness of your wallet!

2000 V-10s are the 2v'ers right? If so, I do believe there are some supercharger's out there for them, whipple I believe is one of them. Although it will cost you a hunk of change, but I think a supercharger will net you the most power, but you'll also have to do tuning in order to compensate it. I think for gasser's chips sometimes by themselves aren't enough.
