Looking for some ideas on what everyone has done in that big dead area between the center console and the dash. I figure a six pack cooler probably isn't the best idea so are there any other aftermarket options out there that would fit and look good? It just looks incomplete.

Spend some time in your shop and make something up! That's what I did.
An old computer tower case. I just trimmed until I got it to fit snug and ran some door trim edge guard aroung the cut side where it touches the factory console.
I built a center console from MDF board and some black & tan carpeting. I put a Micro PC in it and I store a bunch of MP3's and some Video movies on it. It also runs MS Streets & Trips for me. The 7 inch monitor is a touch screen and I have my backup camera on the seconday input & the PC on the primary. It also was a nice place to mount my CB & the actual monitor itself. I have the audio hooked into the stereo system using the same PIE adapter that I used to get my SAT radio into the factory sound system. The PIE adapter has 3 seperate RCA inputs so my Sat Radio is #1 & the PC is #2, I have a 3rd available for future use if needed. I am powering the system using a power inverter that I hid under the cup holders in the rear of the center console. Here are a few pictures.
