A thermometer is a MUST have. You want to keep the oil at around 350f, because if it cooks at a cooler temperature, the turkey will tend to be greasy, and above 350f the obvious....
Pot size is important too. The entire turkey needs to be submerged to cook properly. The 30 qt. stainless pots are great! You won't melt an aluminum pot unless you heat it empty. Remember, those burners range from 60k to 100k BTU's! Place your cooker well away from the house, on a solid, level platform. These cookers are top heavy. They can also flame up very easily, especially when you are placing the turkey into the hot oil.
Peanut oil is the best as it has a higher usable temperature. Veggie oil tends to scorch if you go much over 350f. We tried veggie oil 2 years ago. It was edible, but barely.....
Last (and best) bit of advice, read and follow the instruction book!
You guys are killing me. My cooker is in storage until I get back from the land of the morning calm.(Korea) Before I left Texas a couple of my buddies and I would get together and cook either turkeys or chickens. Different cooking times though. My little girl is happiest when I use the cooker to boil about three pounds of shrimp and then change the cooking medium to oil and fry the same amount with that Zarteranns or whatever. Damn, npw I'm drooling. Oh well, I'm off to get some rice and noodles.
