the best 40" tires i had on my old truck were Pro Comp X Terrains. they were 40x13.5xR17. they looked sick, weren't super noisy, and did i say looked sick! i actually got better milage when i switched to these tires from the other Mickey Thompson's i had but those ones were 15.5" wide so that could be.
i also really liked the 39" BFG Baja Projects but those were out of my budget.
you want to clear 40's??do a little trimming or go body lift would be cheap route...or go drive around pismo, bako area and check out all the lifted trucks
I'm running 6" Skyjacker and 3" body lift... the 39.5 IROKS I have rub on the leafs as well as the front bumper as well as the rear inner fender.
Proper offset would fix some of these issues, I've already removed material from the bumper... but you're going to want some offset as well as some trimming. They are going to stick out some if you don't want them to rub inside when you turn,.
