The loins are along the "back" side of the animal, directly beside both sides of the spine. Anyways I have never been a fan of canadian or "back" bacon (same no matter what you call it) because it lacks the fat I so much love in regular or "side" bacon.
Very good sausage compared to very good bacon would be very difficult to choose one over the other, but I still "lean" toward bacon.
Problem is, there is a lot of "bargain bacon" found On Sale! at the supermarkets and sometimes "bargain sausage". In this category the bacon wins hooves down. Cheap sausage usually tastes just plain cheap.
I honestly can't believe how many like sausage over bacon...that's like saying a hamburger is better than brisket... Even bad bacon is better than good sausage...
(But I do like chunks of sausage in my biscuits and gravy, not the tiny little microscopic bits of sausage that most diners will give you--my wife makes it the right way. Add a little chipotle Tobasco sauce, and you're starting to give bacon a run for its money.)
