Why decide? They're both good.
We have a small grocery store nearby that is built around an 'old style' butcher shop.
My wife came home from there one day, with the most delicious MAPLE sausage!!!!!

I picked bacon but I like sausage just as much. every Saturday is Breakfast day here. I make from scratch biscuits, sausage patties from the pig I butchered, sausage gravy, bacon and fresh eggs from our chickens

That's the only time I'll take sausage over bacon, some biscits & gravy with sausage patties.

Bacon. Crispy, not soggy. The only sausage I really care for is summer sausage.
