I've noticed this too. It's quite annoying. A lot of times I come out and find 3 or 4 other trucks parked right next to me. Maybe someone should study this phenomenon...
It's quite simple. Big trucks park out in the boonies all the time. If you're in a parking lot with shopping carts I try and find a blocker truck uphill to park behind. I also look for a truck that looks nicer to park near in case any theifs decide they want to steal a truck. Between my stick shift and the pretty truck sitting 2 spaces away I feel safer.

When dealing with a full parking lot, sometimes i'll try to park next to a nicer truck, only because I think it's less of a likelihood of door dings..but I've never put that much thought into it.
I had a truck full of girls (6 of us) a few weeks ago and had to wedge myself into this teeny tiny parking spot at an Applebees. U should have seen all of them trying to get out in their heels and whatnot with the door only open about 6 inches. hah.
I can tell you, lesson learned from my motorhome, we were pulling a trailer, had good tires but still blew a rear tire on our motorhome going down the freeway. It was a wicked ride and we still had a tire under us, can't imagine if there would've only been one tire! I know and realize motorhomes are heavier than what we are talking about, but haulin a trailer and a flat is ugly. After that, I decided the extra tire is worth it's weight in gold.

My wife doesn't put much thought into it either. She always seems to park at the lowest spot at the grocery store parking lot and I've had to replace more than 1 tail light because of this.
When there's many parking spaces available it doesn't hurt to choose wisely.
Another idea to head off the shopping cart casualties is to park at the top of the rise, even if it's at the far end of the lot.
We all need our exersize anyway.
I always park at a corner lot where the passenger side faces the kerb. The probability that the vehicle that parks next to me will have a passenger that will open the door is usually pretty low whereas the probablity that there will be a driver opening his/her door is 100%. These corner lots are usually far away from the building so I avoid the shopping carts too.
My job is in agriculture, because everything out here is sprinkler irrigated and we have a clay soil that sticks to everything, my pickup is obscenely dirty on the outside quite a bit of the time. One day a couple of years ago I went to Wal-Mart to buy oil and a filter. I left the store and as I approached my pickup there was a mother and a teenage daughter ahead of me getting in their mini-van right next to my pickup. Just as I get there, the girl, in a loud voice, says "MY GAWD, that is the dirtiest ugliest truck I have ever seen!" Her mother saw me coming just as the started to speak, she looked embarrassed, I laughed and waved as I backed out.
