on the passenger side of my truck comes a sound like every five seconds which sounds like if u rattle your tongue also, at that time is hisses. the rpms go up "1" at that time. took it into ford and he said it was a vacuum leak. to fix it he said approx. 1200 dollars. he said he would have to remove the entire inside dash to get at it. will this hurt my engine if i dont fix it right away? it only rpms' up when i am at idle. [the truck only has 78k, threw an engine at 20k-rod]
That sound like a lot to fix a vacuum leak. I've had a few vacuum leaks in my 97 F-150 over the years and was able to fix all of them myself. They can be hard to get to but at least the ones I had a problem with did not require the removale of the dash.
As far as hurting the engine it shouldn't be a problem.
From what your describing it does sound like a vacuum leak but I would check the vaccum check valve on the fire wall on the passenger side by the battery. A vacuum leak inside the cab of the truck would only affect the truck when you have the heater or A\C running. When all the climate controls are turned off you don't use any vaccum..I had a problem like yours once and that's what it turned out to be.

vacuum leak will not hurt. does the AC and heater work correctly? if you have llow vacuum, the defroster will have flow, and floor vents will not. dealer could take off the rubber vacuum hose at firewall into the cab, plug it, and prove his point. i doubt he is correct that it is under the dash if your heatre works correct.
