Recomendations for Tires
What would be your suggestions for a AT tire? I live in Central TX and would like to experience off road but obviously not enough to decide when I bought a truck to go with a 4X4 or All wheel. So the tire would need to be aggressive enough to allow for some off road but also allow for an ok ride on the road, since that is where it will be used the most.
The OEM for my truck is 18" rims but I had that increased to 20" chrome rims, currently with 275/R5520 Pirelli Scorpions. Also with your suggestions on tire size, what would the increase in height be? All the suggestions will be greatly appreciated.
Stock that came on my tire were 275s. My truck went up .5" b/c of my tire switch (total of 1" diameter diff but /2 that's .5 of actual lift).
You can most likely get away with 33's (maybe some rubbing issues??) but anything smaller should work out well.

I can speak for Tundras, and not F150s here, that 305s will sometimes rub on the skidplate.
So, for now your tires (275/55/r20s) are 31.9" tall. Realistically, you want to go to like 33.2" tall tires. That would be the 305/55/20s. The 285/65/20s are 34.-" tall. My tires are 33.2" tall I believe and they're a solid fit (wish they were a tad bigger though) but still look great.
Unfortunately the 305s are like $50 more than the 285s.

3 Questions for you:
1. 4x2 or 4x4? I think I'm reading that you are 4x2
2. How much $$$ you looking to spend?
3. Belton, Temple, Killeen area? I'm leaning towards Killeen based on your screen name.
anyways, on eBay, you can get a Leveling kit for $69-89 bucks. the 4x2 coil-over is ~1" shorter than the 4x4 coil-over...so the relative amount of "lift" is different.
4x2, you can easily install the 2.5" or 3" kit. This will allow you to fit 33-34" tires on stock rims without rubbing. Some M/T tires will rub slightly, but 99% of A/T tires WILL NOT
4x4, should only go 2.5". This will allow you to fit 35" tires.
I recommend Autosprings Leveling Kit. I've got it installed on my truck, and it is high quality...and cheap. You have to order their stuff off eBay though.
The install is easily done in your driveway with hand tools and jackstands. About the hardest part of the install is paying for the alignment. There are some before/after pics in my gallery.
