it should help it, I think I picked up 1.5 MPG, but I have 2.5" open pipes, except fo dual high-flow cats. Just make sure that you put turndowns on it right after the headers, you need a little backpressure to help with your low end torque.
I still have yet to put headers on my 351, but then again, it is a windsor right now, but after this summer it will technically be a Clevor as we are affiting cleaveland heads to it and new cam and the whole such, so I'll have to use 351m truck headers on this truck, and It will be recammed and the whole such, So as the the 351 I couldnt tell you if what it does for gas mileage, but one of my pals Jon drives a 350 Chevy c10 and when he put his headers on his truck his gas mileage went even more down the drain that it already was. He's pulling about 7mpg right now. So in my experiences headers hurt your gas mileage, but I guess I'll see this summer.
Headers of the appropriate tube diameter should not harm your gas mileage. It is reasonable to expect a mild increase. It depends alot on whether you have too much back pressure in the first place.
