I have a 1999 7.3 SD and was wondering if I dare to haul 2 ton of wood pellets, for my pellet stove, in the bed or borrow a trailer. The web page I found said only 2,900lbs payload-trailer weight 13,100lbs.

I've put around 4500lbs in the back of my '01 F250 and it didn't hurt it. Make sure your tires are up to snuff, don't be going 90 down a bumpy dirt road and you should be fine.
The cop that checks your load won't care what your truck will handle. He'll just look at that little sticker, and lighten your wallet.
Play it safe- 1 on the truck, and 1 on the trailer.
