302 - Normal Operating Temperatures

Any input on this would be appreciated: I'm in the process of rebuilding my 302, and I'm also rewiring my electric fans and installing mechanical oil pressure and temperature gauges. I have a 195 thermostat (engine is an '85 EFI) installed. Since day one, I have been dealing with engine temperatures in terms of "Cold", "Hot", and somewhere along the spectrum of "Normal". I know I'll get an answer to my questions once I get the mechanical gauges connected and the engine broken in, but it would be nice to install the sending units for the fan switch and warning beeper (an addition) now. My questions have to do with temperature values in terms of degrees F. At what temperature would you say the fans should actuate? Also, if you were to install a warning light or beeper, at which temperature would you have it trigger? I'm thinking around 210F for the fans to trigger, and 230F for the warning beeper, but I realize that I may be too high or low. I don't want the fans to cycle on more often (or not enough) than is necessary, nor do I want the engine to melt before the beeper sounds. Any thoughts?
