ping and engine replacement

Hello, everyone: I wonder if someone could help me out with 2 things. 1). My engine is pinging so bad I can hardly accelerate. Plugs are white, I know, but I set the mixture with vac. gauge. Timing is a bit advanced, just to where you can feel the engine come alive. Also, regarding the pinging, do I gap the plugs at .44 or, I think, 32. It is a '75 390 with a motorcraft 2v. Never pinged before.

2). Engine replacement: I'm buying a long block. I blew a head gasket and sucked a lot of water, now I'm burning about 11/2 --2 quarts a week. What do I look for on the new engine to know if it is a truck engine?

I'm also replacing the intake on the new engine with a Edlebrock Performer, and going with a Pony rebuilt Autolite 4100 square bore carb. ANY HELP IS GREATLY APPRECIATED.
