Okay so what I was wondering was is it possible to convert the 500cfm version to 350cfm version? What would it take to do so?

Well, since the veturi size is larger on the 500, it's gonna be hard to choke it down to 350cfm.

Okay so even if I put smaller jets in it still would make my pick-up bog down? BTW im putting this on a toyota 22r

It depends on if it is bogging from being too rich or too lean.
