Sorry couldn't resist! Seriously I think tire size on the 20's is @ 34" tall I would goess the 18" are slightly less, like 33.5ish

I just replaced my stock Continental 275/70/18s with Nitto Terra Grappler 285/65/18s. The 285/65s are about 1/2" smaller diameter than the 275/70s.
The way to figure the height of the tire is multiply the width (285mm) x the ratio (0.65) = 185.25mm. Then convert to inches by dividing by 25.4 = 7.29. This is the sidewall height.
If you double this and add it to the wheel diameter you have a pretty close estimate of the tire height. 7.29x2=14.6 plus 18 = 32.6 inches high.
From this you can see that if you have a 20 inch wheel but the tire height is the same then the difference is the sidewall height.
I doubt if you could tell by driving the truck if it has 16, 17, 18, or 20 inch wheels. 20" with less sidewall may ride a little rougher since there is 1" less "flex" but I don't know.
Either one should be fine for towing a boat.
