I recently replaced the glow plugs (5 out of 8 bad) and had one get stuck. Had to have a mechanic pull the head so that the lodged probe and element could be pushed through. Since I got it back, it no longer runs right. In cold weather (15 F) it starts really hard and then rocks really hard when stoped at lights. Dosn't do this once its reached operating temp, but when under power, the engine really jerks like a miss fire or air in the fuel line. The rpms drop then come right back. It was suggested that I have the O-rings replaced on my injectors since having removed them to replace the glow plug, they may not sit properly once reinstalled.
At warmer temps I have a slight lag in power when starting from a stop. I think that the two are related but I'm not sure.
Im suprised the shop didn't replace the injector o-rings when they removed them. Thats bad.

Why in blazes didn't the guy do the o-rings while the head was out?????
Or did he just pull it, leaving the injectors in? That would be just as bad with the weight of the whole cylinder head sitting on the injector tips while the head is being worked on, sitting on the bench.
Another symptom is that I think I am leaking fuel from some place, as I found a wet area on under the truck. I have not been able to find where it is coming from though.
I did a little research on them before I went to them. They mentioned that changing the o-rings was an option but not necessary, and that changing the o-rings on one side would be bad for the engine. I plan on giving them a call and see about getting it back in to replace the o-rings on both sides. Do you think changing the o-rings will fix my symptoms?

I have to disagree with thier assersion on changing the o-rings. They get a "set" to them and will operate for years if you don't disturb them. Take them out and off bets are off. Not just for injectors, but for any fitting that uses o-rings as a sealer.
I don't personally work on Fords for a living, but I do make my living as a VW and Audi tech.
I never give the option of replacing o-rings if something is removed. They get replaced or I don't do the job. Simple as that.
As far as answering your question highlighted in bold, that is a big maybe. If it were my vehicle and was experiencing the difficulties that you describe, the first thing that I would be doing is replacing the o-rings to erase all doubt and see what happens.
If the problem persists, then there are other issues to deal with.
With that said, I would be surprised if you have any more problems after that.
Pretty good chance of the o-rings being the culprit.
