How do you know it's off? A rough adjustment is the float should be level when the needle valve is shut. If you have the kit, it has the adjustment chart in it.
99% of the time, gas pushing out of the top of a rebuilt carb is dirt in the fuel system. Pull the float assembly up and out completely, and when the needle comes out, look down in the hole and see if there is a speck of dirt holding it open.
I would adjust the float by gently holding your finger down on the needle valve, and make sure the float is level or sloped down just a little bit. If you get it too low, the truck will hesitate if you go around a fast sharp turn.
I don't have the charts, or I would look it the exact spec. But level should be close enough.
P.S. There is also a spec on how much the float drops. I am going to assume whoever rebuilt the carb set this. You can try it by letting the float fall completely down when the bowel is dry with no gas in it. The float should not drop till it hits the bottom of the bowel, it should stop. This also keeps the needle from coming up too far and hanging up. If you are getting into it this deep, you might as well buy a another kit and do it yourself.
