Centech is supposed to make the harness work with ford factory connectors and the wiring is color coded and marked so it should be easy to install. Plus you will have a new harness rather than a 30 year old one.
I just installed the Centech harness in my '79 250 CC last weekend.. I'm not too much an electrical guy either, and I did ok.. I got tripped up with the alternator wiring, and after just 2 calls to Centech for help (they were VERY patient and helpful!!) we learned it was my alternator with the problem, not the new harness/install. When I bought it, Centech told me "it won't fall onto the truck by itself, but it's not too tough..." They were right- it was a little frustrating at times, but now that it's in, I'm happy with my new harness that no longer has tin foil as a fuse! Take the rat's nest out, pay a friend in beer to help out, and take next weekend and install peace of mind :-)

I hope I'm not hijacking here, but I'm looking to do the same thing.
According to Centech, they don't make a complete harness to do the entire truck - just the dash and part of the engine compartment (i.e. no marker lights, tail lights, etc). Didn't sound right to me (I emailed Centech and got the response). Is this correct from your experience? Did the wiring come terminated to a connector to fit your heater fan switch?
Did it include the ignition wiring (not the ignition switch, but rather the ignition wiring in the engine bay)?

The Centech 'harness' is really several smaller 'harnesses' that when combined will replace most of your truck's current wiring.. On my truck I had to reuse my heater switch, fuel tank selector switch, wiper switch, taillight and marker light sockets, and I chose to reuse my interior light(s) harness (very minor detail).. The kit comes in 9 different bags, and you just pick one bag to install, do as much as you can, and then get the next bag and so on.. about 1/3 of the way through I began to think of it as a giant puzzle, and I just had to 'install' the pieces. A word of warning, it took a full 2 and a half days to wire the truck. If you do it, you will be VERY happy (when you're done!) My rat's nest/butchered stock harness was a fire hazzard, and my truck had the common "slow to crank" problem.. ALL electrical gremlins are now gone-- maybe I'll put power door locks in next- at least this harness can handle the 'add on' stuff. It's a big investment in $$ and work, but I figure one day I'll get at least part of the $$ back at resale.. at least I tell myself that..
