You have to come up with a pedal cluster, clutch hydraulics, and a transmission. Depending on if you want a 4 or 5 speed the transmission will cost between $50 and $2500, just for the unit.
To replace the pedals the steering column has to partially drop out, which means the dash has to come part way apart. The clutch master cylinder also has to be positioned and have a hole cut for it in the dash. I'd anticipate 2-3 hours here.
Then the old transmission has to come out along with the flexplate off of the motor being replaced with a flywheel. another 2 hours, plus the cost of a flywheel and clutch.
Then the transmission has to go in, along with the slave cylinder. cost of slave, plus one hour labor.
If your crossmember has to be moved figure on another hour labor.

Now, will your driveshaft fit? If not, plan on $100 to shorten one and 200-300 to retube (lengthen) one.
So if you want a 5 speed with a new or rebuilt unit this could cost about $4500. If you use a used 4 speed, it'd probably still run you at least $1500.
If it was me and i really wanted to do this swap (which i actually am getting ready to do), i'd buy some tools and roll up my sleeves. it'll be a good learning/bonding experience.

As an educational tool, there is a good value. But a lot of frustration at things that 'almost' fit, but need that extra...
Get a donor truck, park them side by side, and then you can swap parts to your hearts content. Even speedometer the gears in the tailhousing.. To have the stuff fabricated will cost one arm, two legs and your firstborn puppies...
