My son bought a 96 stroker with 190000 miles on it. It has a 5 speed. My previous stroker was an automatic. His seems to have a dead spot or hesitation problem when accelerating. Once it goes it can really go but it seems like it takes a couple of seconds to get it up to speed. One would think it was turbo lag but my old stroker with an automatic seemed strong as soon as you stepped on the go pedal. Any ideas?
Doesn't seem to miss or blow smoke of any color while waiting for it to take off.
Turbo lag vs hesitation can seem the same but with Turbo lag it usually happens right off idle but the truck still pulls, it takes a moment for it to really pull hard.
Hesitation is when the pulling stops, like a dead spot in the accelerator or turning of a switch, and then starts again.
Are you experiencing both of these symptoms?
Hesitation, for the lack of a better word, would be likely caused by a bad TPS.
Turbo lag is normal but should only last for a short time. If it lasts too long it could be a few things, exhaust leaks, like Neal said are the most common.

check the intake rubber hose thing, if it's orange, it's probably torn and you need to get the "upgraded" black one... when i took mine apart last week for some "maintence" (ie: stage 2 injectors/fuel pump ) i removed that hose and found it to have a HUGE rip in it... it caused me to lose 7-8 lbs of boost and really took away some of the punch off the line...
It just can't get going very good but once it grabs, it takes off. Seems real strong when you get it going. Don't think there is any leaks.
Is there any way to check the tps out with a voltage meter?

Nope, unless you have a really good scanner like Autoenginuity. It's very difficult to check the TPS WITH a voltmeter, it's hard to see the dead spot no matter how slow you move the pedal. There is actually a Graphing Signal Generator that's used for testing those types of sensors, most Good repair shops have them, key word is good.
Did you put the stage II's on glass? Update the sig I am interested. I really want II's also.

the 5 spd's always seemed "sluggish" to me when bone stock, put a nice exhaust on it, do the 6637 filter and a chip and see how she feels takin off then
other than that easy (but not perfect) injector test is let it idle and then just put her to the floor and hold it, it should shoot right to the limiter and hold fast and smooth, if it stumbles or smokes at all you have injector o-ring issues, if so, a cylinder contribution test would help alot there

well that's other forums are telling me... it's the intake hose that goes from the filter to the turbo... i haven't run my truck since i popped out my injectors so i don't know if it helepd at all... i put 4 injectors in last night and i'm gonna pop the other 4 in today.. i gotta go get some fuel hose today too before i can run it
