Have you tried towing with the radiator cap loose?
I had a an old KW one time I ran the cap loose to keep from busting any rotten hoses..............
Yeah I know it keeps the boiling point of water at 212 versus the approx. 3.5 degree F increase per lb. of pressure,(assuming straight water while working in it) BUT I have run a lot of them losse for many miles to correct a few different cooling system, problems.
I mean leave the cap on the radiator where it won't fall off, it just won't hold pressure, I would be curious to see if this changes anything.......
If it was mine I would NOT run her till she boils water out, when the temp guage rises above normal (for towing) and its obvious its getting hot, I would pull over shut it off and let her cool down.........
Course by now, sounds like you know exactly how far to go before turning around so you will be within site of your driveway when she overheats.........LOL
PSS: you probably have already done this, but once you get her fixed be sure you use DISTILLED water when you mix your coolant and not tap water........

The radiator externally is clean as a whistle - that was one of the 1st things I took care of to make sure.
I've also run with the radiator cap loose and she still boils it all out....
Had a buddy that just left that says even if you can flush water through the radiator, doesn't mean that it's not plugged up...... beats the **** outta me I thought, but he explained that there is a tank on each side that connects to each other and water will appear to run through it ???? but somewhere on the inside it can be plugged ?
I can only imagine my next step would be to go bring this thing in for an acid bath ??????
OK - once again - proper T-STat is back in truck...... Just pulled the radiator and taking it to a radiator shop to finally eliminate that as the last possible problem.....
Wish me luck - will post results a bit later.

Picked up radiator from shop - 70yr old man in business for 50yrs.....
Radiator was 85% clogged up ! ! ! ! ! !
Brought it home - installed it back - put T-stat back in - filled her with coolant and hooked up to the gooseneck with #18,000lbs on it.... dogged the crap outta her for about 20mins.... Never once ran hot ! ! ! ! ! ! !
YES ! - amazing - spent close to 900.00 total since the overheating problem started and now she's fixed with an $80.00 radiator cure !
thats great you solve the problem. i was going to say earlyer that a diesel runs cold. and untill you put a load behind it you really wouldn't know how well the truck cooled.
