Would you give the price of a gallon of milk for guaranteed 100% all natural cheedar cheese from home ???
For months I have been looking for the one ingredient I needed to make my own cheese - and now I have it. RENNET.
I had to go to http://www.junketdesserts.com/ and order rennet tablets online because no store in the area carries the plain old tablets these days. They are dirt cheap, and two tablets are enough to make five pounds of cheddar, plus whatever ricotta you recover from the whey (complete instructions are in each box of tablets).
There is a recipe in the boxes as well for making:
String Cheese (American Mozzarella)
Feta cheese
Cottage Cheese
and Neufchatel
For Cheddar - you need 5 gallons of milk (to make FIVE POUNDS), 1 1/2 cups of cultured buttermilk, 2 rennet tablets, salt, and various apparatus including a cheese press made out of a steamer pot or whatever is handy...
This is going to be fabulous...

I did not have a source for RENNET, now I do. It was hard to find - the answer is secure ordering online, and it worked well.
Now I have what I need to do it right!
RENNET makes a big difference, without it you can't go beyond making something like cream cheese. THIS is the next indicated step...
The action of RENNET on the milk allows for a much more condensed and harder final product, which can be compressed or squeezed to form the final cheese that will be stored.
Interesting to find out what we are really eating, isn't it? I pursued this for the sake of solving a puzzle in my own mind. I wanted to know what it was and where it came from.

Is it just me, or does that look like a toilet on the front of that box? I think the manufacturer is trying to warn us off...I'll stick to store bought
