The object here is to get gourmet grade VERY EXTRA EXTRA sharp cheddar of my very own. VERMONT makes some fine ones, but not at all like the refined super sharp cheeses that any good wine and cheese shop used to carry in the seventies.
If you can even find that stuff - it is priced at the "MY GOD -YOU MUST BE KIDDING!!!" level...
