Carb Question

I have a stock 4 barrel on my rebuilt motor. Everything is basically Edelbrock (timing Chain, Cam, Intake) Should I also put a 700cfm Carb on (Edelbrock)? I know this will take away from my emmissions a little but do you think like will make that much of a difference?
