I've been thinking about putting a Vortec Supercharger from Summit Racing

How will it effect my MPG??? Plus would I need to redo my ECU or anything, I want just a Bolt-On kit that I can use without alot of work.

Yes, you will need to re-tune the ECU. I'm not sure if that kit includes a tune or not. Most likely it will affect your mileage, because you'll have an increasing tendency to get in a hurry! If properly tuned, and if you stay out of boost almost all of the time, your mileage should not change much.

That kit does not come with any aftermarket tuning. However, you can get by with the supplied FMU and hook up an ignition/boost retard controller. If you're running speed density, aftermarket tuning is going to be scarce so the FMU and boost controller may be you're best bet. I would also recommend running a plug that is one heat range colder than stock to help keep the combustion temps from increasing too much...and always run the highest octane fuel available in your area.

When I first put the Procharger kit on my '05 Mustang at 8psi boost my fuel milage actually got 10% better, ...... on a longer trip when I could keep my foor out of it. But it sure liked it when I was just "running around"
Running any S/C system without a good custom tune and being sure your fuel trims and A/F ratio is accurate, is extremely foolish, and only invites a broken motor. If installed and tuned correctly you could have years, and many miles of trouble free enjoyment out of it.
Depending on what you want out of your truck, a Certrifugal type S/C may not be the best choice. They tend to make more power in the upper RPM range. A conservative amount of boost (6-8psi or so) will not give you great gains below 3500-4000 rpm.
