"Pico de Gallo" (literal translation "Rooster Beaks)
Add to a food processor the following items:
Juice of 1 medium size lime
1/2 medium white onion (vidalia or 1015 is best)
small fist full of cilantro
3-5 jalapeno pepers (de-seeded) to taste preferences
pulse chop the food processor to desired consistancy
add 5 medium/large tomatos (quartered)
1 teaspoon salt
Pulse chop again to get tomatos to desired size
place in covered bowl and let stand un-refigerated 30 minutes
to 1 hour for flavors to blend
