What kind of engine are you installing them on? I am assuming diesel, is it 7.3 or 6.0? I do believe ITP diesel and DieselManor has detailed install instructions.
It depends on the guages. I feel electronical guages make for easier installs. I am running a mechanical boost/vac, but Elec oil pressure and A/F ratio.
To do the job cleanly plan to go slow and take about 3 days. I use the first day, or evening to give the pod the right color. I try to use at least 3 light coats on the left and then right, with a light coat or two on the inside to make sure I have it all colored.
Next, I sit down in front of the TV with my pod and guages. I push the guages into place, lay out the instructions and begin building a wiring harness. I combine as many leads as possible. Lights and ground going to each guage, but you may need other grounds, power, and then signal for each. My setup left with ground, light, power, and 2 single wires. Give the leads a little room to stretch so if you ever need to change a bulb you can just pull the guage out.
Third step, mount the pod to your a pillar. Electrical tape works good to hold the pod and pillar together. Set the pillar pod on the dash and run your wires down the dash. I like to connect to the back of the fuse box, so I pulled the 4 10mm bolts and found my light and switched power leads. It's important to fuse these now. Splice in, run the ground, and then the signal wires out the fire wall and to your sending units.
I like the idea of adding some gauges, and I like the location of the pilar mounting, but I don't want to get rid of the handle that is there now. I guess I'll have to go for a dash mount.

If all you want it 2 guages, they have an option for 2 guages and still keep the handle as well.
