Short answer to your question: No, everything from the 2.8 will not bolt up to the 2.9. From what I understand, the only thing that bolts up to both the 2.8 and the 2.9 is the transmission. They also have the same engine mounts. After that, they are different.
From what I understand, there is no easy way to put a carb on the 2.9. A 2.8 intake doesn't fit, and there are no "bolt on" kits out there for putting a carb on a 2.9. If you have the means, I'm sure someone with the right tools and know how could fabricate a custom intake that would allow you to put a carb on a 2.9. If "using the fuel injection isn't really an option," I think you'll be money and time ahead to trade the 2.9 for a 2.8.
I have seen (at a swap meet) that someone had built an
adapter and hooked up a side-draft SU carb to the air
intake tubes on the 2.9 Injection manifold and after swapping
to the 2.8 distributor (which only takes swapping out the drive
gear) the thing ran pretty good. The long air intake path
acted almost like ram tuning but it wasen't too peaky.
