The answer to why, is that the AC / Compressor causes the engine to suck to much fuel when all I need is some air flow over the windshield to defog/defrost, especially in winter when the compressor (in my view) is unnessesary.

The compressor is actually very efficent in winter because it dries the air. When you want to defog the windshield you want dry air to wick the moisture away. The compressor doesn't run that much, if you watch it, it cycles on and off and usually not for very long if the system is intact.
You can try to bypass it but I doubt you will see a fuel savings.
Any fuel savings you'd obtain would be so small you wouldn't even notice a difference.
If you're real worried about it, just unplug the low pressure switch for the winter.
Because the weather is colder, the compressor only actually runs for a fraction of the time, and runs at much lower pressures than in the summer, resulting in a very small load increase.
