i run that exact setup with my stroker and 4.10 gears and i have been very pleased. i run a lot of highway going back and forth from work in atlanta and i i have saved a lot of cash in fuel b/c i am not hitting near as high of RPM's as i was with the stock shoes.
the only time i feel a difference is when i am hauling a trailer in the hills, like around tellico in the mountains and even around grayrock there are a couple of real nasty hills that i can't hit any higher than 3rd gear.
That tire is ~10% larger than stock so gear 10% lower than stock will get you back where you started. I always favor lower than stock to save transmissions and for the extra power. Besides fueling and economy is more load dependent than rpm dependent on FI vehicles so mileage shouldn't suffer. The mechanical advantage of the lower gears requires less fuel per rpm (to a point).
