For the '94 with EFI, it should be 195º but if you have it converted to carb for your '67 then you could go with a 160º-180º or thereabouts.
As for the temp sender, there may be some changes in resistance between the '67 and the '94, I'm not really sure. To be safe, I'd go with the stock replacement temp. sender for the '67.
I would run an aftermarket Mechanical temp gauge. if you have the time to mess with the stock gauge and the 95 sender great, im sure if you hook it up it will either work or it wont.
