Backyard BBQ-Smoker Build

Ok, I searched other websites,and still haven't found alot about what I would like to accomplish. I do a good bit of BBQ / smoke cooking at home. I also love to have backyard fires in the evenings. I would like to build a grill / smoker / fireplace all in one structure. I know that these are 3 seperate functions, but reallistically, they could all be needed at the same time. I know that this could be a sizeable structure, but I was wondering if any of you have done something similar, and if so, how did you do it? I'm open to any suggestions. The outside of it would be faced with brick or stone, but I'm not sure about using firebrick outside where it could get soaked by rain. I would appreciate any input. Thanks.

I've never seen such a thing; maybe you should be the one to invent it! For good slow smoking, you want the fire separate from the cooking area. Maybe you could build a 2 (or even 3) chambered affair, with a fireplace/smoke generator on one side, with a flue connecting it to a separate chamber for smoking. You would have to have some way to semi-enclose the fire pit for smoking- maybe a couple metal plates to put in place. You could open it all up for a fireplace, or put a grille on top for direct grilling. I don't know about various materials as far as getting wet. I know that my clay chiminea should not be used when wet or damp- it will crack. The old brick backyard grilles from the 50's looked cool, but they were lousy for most types of grilling. I cook almost everything either on a Weber kettle grille, or a Brinkman smoker. If I were going to build one, I'd probably use stone or brick on 3 sides, with a stainless steel front and top. You're giving me ideas!

Yeah, I have not seen anything like what I am imagining either. I was just wondering if it was ever done before, or if it would be too monstrous and look stupid. I do all my cooking on a New Braunfels smoker/grill with the offset fire box. In fact, I am going out to put a pork shoulder on it as soon as I'm done here. The food that comes out of that thing is great. Maybe someone should do this on the food network...lol Thanks.

You can buy a drop in grill to install in a brick surround. If you tie it facing onto the fireplace it wouldn't take up so much space. I've seem square smokers that shouldn't be too hard to brick around. As far as the firebrick I had them in the bottom of a fireplace back in Pa. that got rain and snow for years and it didn't seem o hurt them. Good luck with your project..

I'd just dig a fire pit for the outside campfire sort of function. Then, build yourself a nice smoker/bbq'er out of a barrel. The barrel grill we have is supreme. If you have welding skills, you can make one in an hour.

I've seen something similar to what you'd like to do, but I wouldn't consider it a great smoker. It was tall, about 6 ft and similar to a pyramid; however, the top didn't come to a point. I'd guess the base was 3' x 3' and tapered up to maybe 6"x6" with a flue at the top.

The bottom 2' of it was the fire box. The top portion of it had a door that swung open to give access to the shelves and hangers. You could place your food on the bottom shelf for grilling or put your water bowl there for smoking.

The bottom section was unique because you could open it up and it would act as a fireplace. I don't remember if every side opened or not.

It was pretty cool. I saw it at Outdoor America, I believe. Good luck!

Thanks for the replies, guys. What Jerrybo66 brought up was a good start to what I have in mind. I wouldn't even mind using the smoker I have, if I could figure a way for good air flow and pretty much hiding all but the lid. You guys have given me some good ideas, and I thank you. Any other ideas are certainly welcome.

I know this is slightly off-subject on my own thread, but I just found a website for anyone interested in slow smoke cooking that seems to be alot like this site. It is www.thesmokering.com
