My friend's truck (old Ford diesel V8, F250) has developed a problem.
It starts and runs fine but when he lets off the gas the engine returns
back to idle and then dies, this makes steering really tough in traffic!
What should I check for? Does this sound like a failing solenoid?

Gotta get more info on the truck to us , year, trans type, last fuel filter change, how old the injection pump and injectors are roughly. Has he done a fuel lift pump pressure test, is it smoking at all while running. RPM setting is on the valve cover tag, auto in gear manual in nuetral. Is he running any diesel fuel additives ie Stanadyne or Power Service. How often does he drain the fuel filter/water separator for water.
Make sure you use some Diesel additive. If the governor in the pump gets gummed up with wax and varnish the truck could stall when returning to idle.
Note, my 93 F250 to this day will stall if you high rev it (say 2,500 to 3,000 RPM down a steep hill in low gear) and then pop the clutch and let the RPM's drop suddenly. I can usually avoid an engine stall if I bring the Revs down in in a controlled way by keeping my foot on the throttle a bit for a second or two. A third foot really would come in handy during these times.
Mine did this same thing around Christmas time. I had it checked out at a local performance shop and they said my pump was going. Not having the funds to replace it then I kept driving it and it went away on a trip I had to make. Come to find out I had either some bad diesel or gunk in my tank. Anyway I would change the fuel filter, add some additive and get a fresh tank of fuel. Good luck.
