The difference between a stock and RV cam really is noticeable with low end throttle response which is a lot of fun for driving and of course hauling stuff!
I think the fuel efficiency isn't the main reason for getting such a cam. I think your numbers are a bit optimistic.
Usually RV cams have similar durations and overlap than stock cams but a good bit more lift. That way your engine can breathe much better, without compromising idle quality / compression. I have an RV cam in a 4000 pound convertible and it makes it real snappy and nice to drive even with 2.87 gears.
