16" wheels VS 20" wheels

We have 2 F-250 crews, an 03 (with stock 16" wheels) and an 06 Amarillo (with 20" factory wheels). I'm wondering what needs to be changed on the o3 to accomodate larger rims (like 18"), so the spedometer, ABS,... all still work correctly. I assume there's more to it than just putting on bigger wheels and tires. I really want to go bigger (so it's sit a little higher too). The wheel wells seem to be the same size on both trucks just the 20's fill the space more. The 16s look tiny next to the 20s. I do tow a horse trailer periodically so I don't want to get too crazy.
Any thoughts, opinions, advice?

As long as the bolt pattern is the same, and backspacing is the same or very close, you can just put the larger wheels on. However, there are less 18" tires to choose from.
