i agree with mr webers...turn your a/c see the difference....i've been doin' that
for a while now, i had no problem..... if your a/c / heater has auto, set the temp you want and just drive.... but if you don't have the auto features set your heater to desired temp then turn you a/c.....it acts as your dehumidifier..
From what I understand from the owner's manual, and from what I've heard under my own hood with the A/C compressor engaging, the A/C should go on automatically when you select Defrost or Defrost/Floor. And it does work quite well, particularly in the spring with the cooler, damper weather up here.

No problem with my 04 with defrosting windows etc. In fact I think it does a better job than my 98 F-150 did. Me thinks something is not right in your system..
I have had some problems here lately with my 08 too and defogging inside windows in the morning when cold and damp, and to make matters worse, with the auto temp system, you cannot turn on the a/c when the outside air temp is so low apparently? The defroster and compressor will engage but if you try and turn on the a/c and blow the air out of the normal vents, the compressor will not come on...maybe I have not got the knack of this system but so far in the first few weeks it does not impress, I hope the summer is better, cause it gets real hot here.
either way, it senses the temp inside the cab and engages the a/c compressor accordingly. if it's 50F inside, and your temp setting is set on 55F, the A/C won't come on...it ain't needed.
I have to run my Defroster every single morning (in Hawaii of all places ). I turn off the whole unit, then hit the Defroster button. Then adjust the temperature so that it is 2-3F higher than what my outside temp indicator says.
This ensures that air hotter than outside is hitting the windshield...and the fog goes away within the 1st mile or so.
Also make sure you dont have the inside air reciculation position selected, by allowing outside air to heat or cool the vehicle, it equalizes the air moisture and drastically reduces fogging on the inside. I am not sure all model have this selection or not.
When you have it on recirc, aren't you keeping all of the moisture IN the vehicle?
To the OP: I live in Northern Colorado. We get a little snow. My defroster works great. Make sure your compressor is kicking on when you hit defrost, (My manual says it does) and make sure all the vents are opening.

No problems with the defroster on my 04, works great.. Also my truck warms up real quickly, the quickest warm up of any vehicle i have ever owned and I'm to old to recall how many that number was..
