Update on hot running 351M.
To recap, I reinstalled the 3" spacer on the fan and trimmed the fan shroud to get the proper fan depth into the shroud. I also added Red Lines' Water Wetter to the rad. Highway temps fell from 210 @ 58mph down to 185/190 @ 66mph. Sitting in traffic temps fell from 220 or hotter to 210. The temp also cools down faster when I start to move after sitting in traffic. Thanks to everyone for your knowledge.
