regulate the boost

Is there anything out there that I can install to keep the truck from going above 30 some # of boost? Something that could be changed up or down if desired.

The easiest way is to lift your right foot a little, or turn the chip down. Other than that, you might try lengthing the wastegate actuator rod so that it opens a little easier.

Is it setting the ses and de-fueling? Or are you just trying to keep it down a little??

It can go up to 36# and I want to be able to limit it to where I want.

What Cookie said. Adjust the spring tension on the control rod. It will take a lot of test drives to get it where you want it.
I plan on the same course of action for my truck when I install the Predator tune and guages.

sucking it in = more boost
pulling out = less boost
I assume your wastegate arm is adjustable.

Are you taking the reading off the MAP sensor line or did you drill the manifold? If you are taking your reading before the CAC you will read a little higher than what the engine is seeing.
