The dealer software / pro racer software both have a database with pretty much all late model Ford PCM codes.
The dealer starts by opening up whichever processor code you have, it will display all the parameters in the computer in their stock form.
If you want to run something like an Edge that does not adjust the transmission, then your tuner would not make any engine changes (since the Edge is handling that). The only changes made would be transmission line pressure, torque converter lockup and shift schedule.

Yes, we have a several dealers around the world. The reason you see talk about different dealers getting different results is the fact that some just have more experience, and more knowledge on tuning certain vehicles.
Tuning a diesel is completely different than tuning a gasoline engine for example. And when you have full control of the PCM in a car, its not something very simple to just make changes here and there.
I really am not allowed to make suggestions as to whom you should go to.
