I have power steering and a new Grant Steering wheel, after I bought the truck I drove her home and noticed the steering was very sencitive and had to be very carefull, I have driven a truck like mine with power steering befor and it was nothing like this, if i turn the wheel a little it starts that way and wont straighten its self out if I let go. The alignment is fine, I can point her straight and she stays straight. I was just wondering if the power steering was suposed to correct its self? Somone also told me that in some older trucks there is a spring in the steering that slowly moves the wheel back to the normal position?

There's no spring that recenters the steering. Try jacking up the front end and setting it on some good jack stands. Then grab hold of the tire and see if you can turn it side to side with the engine off. The kingpins could be stuck/gummed up/in dire need of grease. The power assist will overcome the stickyness but normal driving might not. Also, if the steering box is set too tight it will do the same thing.

You might just have to loosen your power steering a bit, My steering is very loose and if I had tightend it up too much It was pretty sensitve and would not return after cornering. Very easy to adjust, so I would try that first.
