A/C and general HVAC question

So I bought a 2002 F250 (4x4, 5.4, reg. cab, auto, 20K mi) about a month ago and I have a couple quick questions. I noticed that whenever I turn the vent HVAC **** to certain positions it will give me A/C even though I didn't turn it to A/C. If it is just turned to the position for the dash vents it does not use the A/C, but if it is on defrost, floor and defrost, or dash vents and floor it will use the A/C. Is this normal or did someone wire my HVAC controls funny? Also, when I bought it it had no rattles whatsoever. Now four weeks later I've noticed the doors rattle a little on their latches over bumps. Are they like older Ford trucks where you could undo the latch bolt a little and move it slightly to adjust how tightly the door closed, or am I stuck with the rattles?

Yes. The system runs the compressor to help dry the air/clear fog.

Yes. The striker bolt has some adjustment..
