I'm new here and did a quick search but couldn't find anything, I'm curently rebuilding a 272 engine out of a 55 Ford F-100, hopefully some of you's can help me out so here's my questions
how do you set the timming?
does anyone have the valve clearance specs?
and does anyone know where to get the torque specs for the engine?

As for your questions, I'd strongly suggest you buy a shop manual from our forum sponsor, www.MotorHaven.com. It's absolutely the best money you'll spend on your truck.
The timing on the 272 is adjusted in the usual way by loosening the distributor hold-down bolt and rotating the distributor body. Timing is 10 degrees BTDC.
Valve lash is 0.018" hot for both intake and exhaust. Torque specs are all in the shop manual. Good luck with your project!
I've heard so many arguments about this I don't even want to think back. Some swear that it will "close up" when heated & give reasons why, others swear the opposite. The only thing I can tell you is that in my experience with performance flat tappet & solid roller cams, the lash will usually open up some (get larger) when the engine is at operating temp. This is on V8 OHV pushrod engines, other types will be different.
In reality, even if yours open up to, say, .023 or so, it won't really be much of an issue, most likely. A little more noise, a little less lift (& duration under the plotted curve). Lash settings are specified somewhat loose as a rule to make certain that even a poorly maintained engine, even if the lash "tightens" (which can happen for a variety of reasons), will still have some safety margin.
If you want, run it up to temp & check your lash, see where you are at. You can always redo it if needed.
all specs for valve lash are HOT, and I always found they get tighter when heated, as the parts expand the clearence decreases...early Yblocks were notorious for burning valves, that why they opened them up to .019 in 56 or 57
