nairod- trap doors are one way swinging baffles to keep the oil around the oil pickup. If you don't baffle and trap door the pan when you accelerate, turn and brake, the oil goes where centrifugal force throws it. Baffles direct oil and trap doors-well- trap it where you need it. The fitting is for oil temp sending unit and the kickout is that extra space. The windage trays are still available from Ford Racing last I looked.
I upgraded my oil pan by building a larger sump(pic's in gallery) and I run a remote filter also. You could also use hydraulic hoses instead of the fancy Aeroquip, Russel, etc. braided stuff. I use a Summit remote oil filter kit on my '89 4X4 with built hydraulic hoses instead of the supplied hose.
The 428 oil pan started as a move drain and slight increase in capacity project and it now has two trap doors, a kick-out on the drivers side, and 3 baffles inside. I did move the drain like I intended tho! It holds 12 qts.

I don't know about y'all boys, but my crossmembers usually have a little oil on them anyways, along with everything else under my truck... dang leaks! So a little spillage during an oil change ain't no biggie for me! I just wipe it up and go on.
